Yummy Chicken Dish

I love cooking. I will admit I even like to cook from scratch, but most nights that is just not possible being a mom of 2 active kiddos and a wife of an early to bed, early to rise man! :-) So here is the best, fastest new recipe I have come across.

Chicken Dish

4 chicken breasts
8 or so new potatoes
2 cans french style green beans, drained
1 package of Italian dressing
1 stick butter

Place chicken in a casserole dish. Quarter the new potatoes and put around the chicken then drain green beans and layer beans outside the chicken. Sprinkle all ingredients with Italian dressing; melt butter and pour on top. Place in oven at 350 degrees for 1 hour and ENJOY! It's that easy!! It seriously takes me about 15 minutes to prepare and it's super yummy!

Kindred Spirits/Sausage Dip

Last night we had Kindred Spirits, which is a time for the Adult 2 ladies (and others) to get together and fellowship with a little food and devotion of some sort. Well last night we had the opportunity to hear one of my CBS friends, Jennifer, give a devotion using her Potter's Wheel. It was really so good I had goose bumps during parts of it. She talked about what goes into making a piece of pottery and parralleled it to how God works in our lives--I wish everyone could have seen it! I think she quoted just about all the Scriptures that mentioned Jesus being the potter and we are the clay--I like it!!!

Anyway I made Sausage Dip for the evening, and Stephanie said it was definitely a blog worthy reciepe! :-) So here it is, just for you!

SAUSAGE DIP
1 pound Sausage
2 sticks of Cream Cheese
1 can Rotel, drained

Cook sausage and drain if necessary. Add cream cheese and Rotel in skillet and let all melt together slowly. Serve with corn chips. That's it--super easy, huh? I actually got this appetizer from my cousin Leslie--she's a great appetizer maker!

Chicken Parmesan

Laynie had her friend, Rebeckah, spend the night last night and I cooked Chicken Parmesan or Yummy Pasta as the kids called it. Beckah said I had to get the recipe to her Mommy, so Amy, this is for you!

4 to 5 chicken breasts
1 egg, beaten
1 jar spaghetti sauce (I use Ragu, who knows what brand they use in GA ha/ha)
seasoned Italian bread crumbs
1 cup shredded Mozzarella cheese
Parmesan cheese
egg noodles (or whatever pasta you have on hand)

Cut the chicken breasts into pieces, dip into egg and toss in bread crumbs. Brown chicken in skillet until juices are translucent (not very long). In a casserole dish, place chicken in a single layer; spread with mozzarella cheese; pour sauce over cheese; top with Parmesan. Bake at 400 degrees for 25 to 30 minutes. Serve chicken over noodles.

Frozen Strawberry Dessert

Well I really love to cook (and get new receipes), so my plan is to post a few receipes every now and then to share with others. This first receipe is one I got out of the Sun Times--Heber Springs' local paper right after we had moved there in the summer of 2000. I'm usually NOT a big strawberry fan unless they are frozen or in a drink like fresh fruit slushes at Sonic--YUM, but this is GOOD!

Frozen Strawberry Dessert

Step 1: Combine 1 cup flour, 1/2 cup chopped pecans, 1/4 cup brown sugar, and 1/2 cup melted butter into a small bowl & stir well. Press this into the bottom of a 9 X 13 pan; bake at 350 degrees for 20 minutes. Let cool for 10 minutes or so and then crush into crumbs. Sprinkle 2/3 of the crumbs in a NEW 9 X 13 pan and set aside.

Step 2: Next combine 2 eggs whites, 1 cup sugar, 2 Tbs. Lemon juice, and 2 cups sliced fresh strawberries in a large mixing bowl and beat on high for 10 minutes (my stand mixer makes this part really nice)!

Step 3: Fold 1 cup whipping cream, whipped into the strawberry mix. Spoon this mixture over the crumbs you placed in your NEW pan. Top mixture with remaining crumbs. Cover and freeze 8 hours. Top with fresh strawberries before serving if desired.
